Chinese Fried Rice - How to cook this Vegan but quick fried rice step by step


We generally cook fried rice in two ways : - Indian and Chinese. The one feature that differentiate between them is the use of sauce. Earlier in this blog I have covered the Indian one. This time it is Chinese. Let's hope you like this one too.

Let’s start the recipe without any delay:-

Preparation Time: - 15 min

Cooking Time: - 25 min

Servings: - 2~3 persons

Ingredients:


For Cooking Rice

  1. 2 cup Rice ( Steam Rice/ Basmati Rice )
  2. 2 tsp Vegetable Oil ( I used Sunflower oil) OR 1 tsp lemon  juice
  3. 1 tsp Salt

For frying rice

  1. 2 ½ tbsp. Vegetable Oil
  2. 1 Medium Onion
  3. 3 cloves of Garlic finely chopped
  4. 1 tsp Ginger finely chopped
  5. 2 tbsp sweet Corn
  6. 4 tbsp Cabbage finely chopped
  7. 2 stocks of Spring Onion finely chopped
  8. ¼ cup Carrot
  9. 5~6 French Bean chopped
  10. ¼ cup Capsicum finely chopped ( Any color Green/Red/Yalow )
  11. 1 tbsp Soya sauce
  12. 1 tbsp White Vinegar
  13. ½ tbsp. Tomato Sauce
  14. 4 tsp Chili Sauce
  15. 1 tsp Black pepper /  1 tsp Red Chili powder (optional)
  16. Salt as per your taste

Preparation: -


For Cooking Rice


  1. Wash rice thoroughly and soak the rice for 20 minutes.
  2. Take a large bowl and add oil and salt to about 10 cup of water. Bring the water to boil and add soaked rice in it.
  3. Cook the rice for 10 min or until it is cooked completely.
  4. Drain the rice completely and then add 1 cup of cold water to cool the rice. Keep aside till it is at room temperature.

For frying rice

  1. Heat sufficient oil in a frying pan/Kadhai over high flame. When the oil is steaming hot put the garlic in it.
  2. Sauté for few seconds until they just started frying. Add onion and spring onion and sauté for a minute more.
  3. Now add the remaining vegetable and stir fry them for 2~3 minutes. Please do not overcook…they should be slightly crispy but not soft.
  4. Combine soya sauce, vinegar, tomato sauce and chili sauce with the vegetable mix and stir them well.
  5. Sprinkle the salt and black pepper.
  6. Now add the previously cooked rice and stir. Please do not stir too much …otherwise rice will be broken.
  7. Turn off heat.

Now your fried rice is ready to consume.

Serve hot with Manchurian Gravy or any Chinese style non-veg gravy like Chili Chicken
