Sabudana vada is a crispy fried snacks popular in West India. This is made with Tapioca pearls, roasted peanut and boiled potatoes. This is not only a tea time snacks but an option during fasting (upvas/brata) in religious festivals. It is a good recipe for kids and vegan as well.
Let’s start the recipe without any delay:-
Preparation Time: - 10~15 min
Cooking Time: - 20~25 min
Servings: - 1~2 persons
Ingredients:-
- ½ cup Tapioca Pearl (Sabudana)
- ¼ cup peanuts
- 1 cup heaped up potato cubes (2 medium potatoes)
- 2 tbsp Chopped coriander leaves
- ½ tsp cumin seeds
- 2 tsp chopped Ginger
- 1 ~2 Green chilies chopped
- 1/3 tsp Rock Salt powdered (general salt if not fasting)
- 1 ½ tsp Sugar (optional)
- 2 tsp Lemon juice
- 1 ½ ~2 tbsp Kuttu Atta (if fasting)
- 1 tbsp Besan (Gram flour)+ 1tbsp Rice Flour (if not fasting)
Preparation: -
1. Add ½ cup Sabudana to a wide bowl and soak Sabudana (Tapioca Pearl) for 4~5 hours in water.
2. There are different qualities of Sabudana and hence it may take 2 hours or even 6 hours. Please check whether they are properly mashed by taking few pearls between your thumb and forefinger. Otherwise the pearls can burst in oil when frying.
3. Drain them in a colander and keep aside.
4. Roast peanuts until golden and nutty smell comes out. Cool to room temperature.
5. Pulse them in a blender only once to get coarsely crushed peanuts. Keep aside.
6. Wash and boil potatoes such that they are not too soft. It should need 3~4 whistles in the pressure cooker. Peel and chop them. You can even crumble or mash them also.
7. Take a wide kadhai and mix potatoes, peanuts and sabudana properly
8. Add chopped Green chilies, chopped ginger, coriander leaves to the mixture.
9. Sprinkle lemon juice on the mixture.
10. Now add cumin seeds, sugar if you like and salt as per taste.
11. Mix everything well to make a soft dough like mixture.
12. Divide
the dough into equal size portions. It depends upon your choice of size.
13. Now make a round shaped ball from each potion by pressing it against your palm. If it is sticky, add some oil in your palm.
14. Heat oil in a frying pan over medium heat for deep frying. When it is medium hot, slowly slide 3-4 patties in it. When top surface turns light brown, flip them and deep fry until golden brown on both sides.
Now your yummy Sabudana Vada is ready consume.
Serve hot with green coriander chutney.
