An easy and quick healthy burger option made with mixed veggie patties and cheese slice. It is an ideal quick and healthy meal and can be served for morning breakfast, lunch, dinner and also a snack. The recipe follows basic vegetable toppings and dressing as practiced in Indian street food outlets to make it more effective. This Burger Recipe covers everything needed to make delightful veggie burgers from scratch, including how to prepare and pan fry delicious homemade vegetable patties. This is n useful dish for kid's tiffin as well. The recipe goes on like this-

Servings: - 4 persons
Ingredients:
For Patties:-
Vegetable:-
1. 250 gm. Potato (2 Large or 3 Medium)
2. 2 Medium Carrots ( 1 cup heaped)
3. 6~8 French Beans ( ½ cup)
4. ½ - ¾ cup fresh Green Peas
5. ¾ cup Cauliflower or Brocoli florets – optional
6. 2~3 Green Chillies (chopped and deseeded)
7. 3~4 tbsp fresh chopped Coriander leaves
Masala:-
8. 3 tsp Ginger Garlic paste
9. ½ tsp Red Chili flakes or Kashmiri Red chili powder (you can have more according to your taste)
10. 1 ½ tsp Garam masala powder
11. ½ tsp Coriander powder
12. ½ tsp Aamchur powder or ½ tsp lemon juice
13. Salt to taste
14. ½ cup Bread Crumbs
15. 1 ½ to 2 tbsp Sunflower/olive/canola oil as much as required for deep frying.
Bread Crumb:-
16. Few slices of bread toasted crispy to make 1 ¼ cup breadcrumbs
Batter:-
17. ½ cup Besan (gram flower) or corn starch
18. ¼ tsp salt
19. 1/3 cup water or as required
Construct Veg. Burger
20. ½ cup Veg Mayonnaise (Burger sauce is better – I will give a recipe for that in near future)
21. 1 tbsp lemon juice
22. 1 tbsp olive oil (optional)
23. 4~6 burger buns (Sesame buns, Multigrain buns or ladi pav)
24. 1~2 tbsp Butter for toasting the bun
25. 4~6 lettuce leaves
26. 1~2 medium tomatoes
27. 1 large onion
28. 1 Cheese slice per burger (optional)
Preparation:-
Prepare breadcrumb:-
1. Take 4~6 pieces of bread and toast them crisply.
2. Now grind the bread in a mixer/food processor. Keep aside. This will be used for the patties.
3. If you do not have bread with you can use rusk biscuits for the same. Smash rusk biscuit to prepare the bread crumbs with the help of pestle and mortar. You can use the readymade ones though but homemade ones are best for crispiness.
Prepare vegetables for patties:-
4. Rinse all the vegetables well and chop/dice as required or mentioned in the ingredients section. Cube the potatoes and trim the French beans at both ends. Cut the stems and chop the coriander leaves.
5. Use fresh ginger and garlic to make the ginger and garlic paste with the help of pestle of mortar. You can use the readymade paste also. I used the readymade paste here.
6. It is better to use fresh peas but I used frozen only.
7. To make patties we need to make vegetable boiled until fork tender, not too soft or mushy. To boil the veggies you can use steamer but I used plain and simple pressure cooker. I will describe both the process here.
8. Pour 2 ½ to 3 cups of water in the steamer. Place a trivet or rack inside the pot. Cover and bring the water to boil.
9. Now steam them till half done. It should take about 5~7 minutes. I put the raw potatoes in a pressure cooker and cook till one whistle so that we reach the same level of boiling. Then I peel them and mix with carrots, peas, beans and cauliflower (optional).
10. Now use the steamer to finish cooking. This should be another 5 minutes. I used to pressure cook all the veggies again for another whistle so that the veggies become fork tender but not too mushy.
11. Cool the veggies and transfer to a mixing bowl. When cooled mix garam masala, salt, coriander powder, ginger garlic paste, lemon juice and red chili powder.
12. Mix all of them well and you will get a mushy/sticky mixture.
13. Add breadcrumbs so that the mixture becomes less moist. The mixture for the patty cannot be too soggy. It will create issue later.
Prepare burger patties:-
14. Test the mixture and add more salt if required. Divide the dough into 4~6 portions Cut the stems and chop the coriander leaves. Keep aside.
15. Take a small mixing bowl and prepare a thick batter with besan (gram flour) or corn starch. Add pinch of salt. We cannot use a batter which is too watery as it will make the patties soggy.
16. Pour the breadcrumbs on a plate.
17. Now take a portion of the mixture and flatten as the same size of burger. Thus prepare all the patties.
18. Dip it in the batter and breadcrumbs so that breadcrumbs stick to both sides of the patties. Coat the patties well and wait for 10 min before frying. This should prevent the patties to mess up the oil when frying.
Prepare lettuce, tomatoes and onions:-
19. Rinse each lettuce leaves under slow stream of water and dry them on kitchen towel.
20. Slice onion and tomatoes to round thin slices. I prefer de seeding the tomatoes as well.
Frying patties:-
21. Heat a pan with 1 ½ to 2 tbsp oil in high flame. Once heated turn the gas to medium and place 2~3 patties or as many as the pan can hold.
22. Fry till the base turn golden and crisp. Then flip over and fry the other side.
23. Remove them to wired racks and cool them slightly.
24. If you are making cheese burgers then put the cheese slices over the hot patties.
The final making of burgers:-
25. Toast the buns with butter and cool them.
26. Half the burger bun and put the lower half on the plate. Spread the mayonnaise sauce on the lower half and put the patty on it.
27. Place the cheese slice on the patty if it is a cheese burger. Then place the lettuce and the tomatoes and onions.
28. Spread some mayonnaise sauce over the top slice of the bun. Place the bun on top of all. In my pictures there is no lettuce as I was short on that. I used sliced cucumber instead. Sorry for the same. Prick the whole structure with a tooth pick to hold them all.
Now the Veg. Burger is ready to serve. Potato wedge, boiled corn and cheese balls are some side dishes which goes well with burger.
